Eggs in a Ham Cup
- Four eggs
- Four slices deli ham
- 1/4 cup shredded cheese
Night before:
Lightly grease 4 muffin cups
Push the ham into the muffin cups,
creating a ham cup
Put 1T shredded cheese into each cup
Break an egg over the cheese
Cover with plastic wrap and
refrigerate overnight.
Preheat oven to come on at 375˚
before you awake.
Next morning:
Remove the
muffin tin from the refrigerator, and take plastic wrap off. Put into the preheated oven, and cook for 15
minutes at 375˚. Serve.
NOTES:

Try chopped tomatoes, or chives, or a bit of
salsa or avocado, instead of or in addition to the cheese.
