Mango Pepper Quesadilla



Very easy, great taste.  Everyone loved these.

Mango Pepper Quesadilla
  • 4 flour tortillas, 8 inch diameter
  • 1/4 cup each green pepper, yellow pepper, red pepper and red onion, chopped fine
  • 1/2 cup mango, cut in small cubes
  • Sharp cheddar cheese, grated, about 1/2 cup, or more to taste

Night before:
  Chop all the peppers, onion and mango, store in plastic bag, with all air pressed out before sealing.  See notes below ofr help with this
  Set oven to preheat to 450° in the morning
  
Next morning:
Lay tortillas out on cookie sheet.
Divide chopped produce evenly among the tortillas, putting it on only half of the tortilla
Sprinkle cheddar over the chopped produce
Fold tortilla half over peppers, onions, mango and cheese
Put sheet in oven for 3 minutes, take out and turn quesadillas, then cook for another 2 – 3 minutes
Serve with mango salsa for more of a good thing.

NOTES:
  • Try spicy Anaheim peppers for a bit more zip
  •  Alligator choppers are available at Amazon, http://www.amazon.com/Alligator-11-1-4-Inch-Dicer-Collector/dp/B000H7AFSI/ref=sr_1_1?ie=UTF8&qid=1331699091&sr=8-1    Make sure you get one with a collector container.  I can dice a whole onion in under a minute with this, and get perfectly even dice.  Works well on peppers as well. Don't try hard vegetables, like carrots or turnips, unless they are first sliced fairly thinly.  It works really well  on potatoes too.
