There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Dory's Corn Muffins



Lightning quick to stir together, then let them cook while you shower.

Dory's Corn Muffins
  • Cornbread mix sufficient to make an 8X8 pan of cornbread.  I like the Trader Joe's 15 ounce box, or some of the 5 pound bag of Marie Callender's cornbread mix that I get at Costco.
  • 11 ounce can of corn, either regular or Mexicorn, well drained
  • Anything else you would like to add - wheat germ, chopped peppers, cheese, chopped ham or bacon
Night before:
Grease 12 muffin cups
Set oven to come on at 350˚ before you get up in the morning.

Next morning:
Pour mix into bowl, and make according to package directions
Stir corn into batter, then spoon into muffin tins
Bake at 350˚ for about 25 minutes until lightly browned
Serve with honey and butter.

NOTES:
  • You can make this as an 8 x 8 bread as well.  Adjust the cooking time 10 - 15 minutes longer.
  • Use your imagination on what else to add - wheat germ, chopped peppers, cheese, chopped ham or bacon, or more.
