Very, very easy, and lots of contrasts - crispy toast with soft topping, hot base and cold cheese, crunch walnuts, chewy fruit and soft cheese. And did I mention delicious?

Cottage Cheese Honey Walnut Delight
- 4 pieces raisin bread
- ½ cup cottage cheese
- ¼ cup honey
- ¼ cup chopped raisins
- 1 pear (red skin looks nice)
Night before:
Lightly mix cottage cheese, honey
and walnuts. Refrigerate.
Next morning:
Toast raisin bread.
While it is toasting, slice pear into 12 pieces.
Spread
cottage cheese mixture on the toast, top with pears, and serve.
NOTES:
Pecans
would work well with this as well, and in the summer, peaches or plums would be
great.
