Pineapple Nut Coffee Cake


Quick cooking, tasty and reminiscent of  Hawaii.  Good fiber, fruit, nuts.  Great any time of the year.

Pineapple Nut Coffee Cake
2 cups flour (or 1 cup white whole wheat, 1 cup all-purpose)
1 cup sugar
½ cup brown sugar
1 tsp soda
½ tsp salt
1 cup chopped walnuts
1 cup coconut
1 15 ¼ oz can crushed pineapple
2 eggs
2T canola oil


Night before:
  Mix eggs, pineapple and oil in a small bowl.  Cover and refrigerate
  Mix all other ingredients in a large bowl.  Cover and set on counter.
  Set oven to preheat to 350° before you wake up.
  Grease 9 X 13 baking pan.

Next morning:
  Pour wet ingredients into dry, stir until just mixed.  Spoon into prepared pan, then bake for 25 minutes,  while you shower and get ready.   Sprinkle with powdered sugar if you wish, then cut and serve.     

NOTES:
·          If you want more sugar, put 1/3 cup of brown sugar, 2T milk and ¼ cup butter in a saucepan, bring to a boil, boil 1 minute, then pour over the warm cake.
