Lindsay's Cheese Puffs




These are incredibly light and fluffy.  And amazingly easy - even if you aren't a baker, you can do these.  They would serve very nicely as an hors d'oeuvre as well.

Lindsay's Cheese Puffs

  • 1 1/2 cups flour
  • 4 tsp baking powder
  • One cup shredded cheddar cheese
  • One egg, beaten
  • Milk to fill cup measure (see below)


Night before:
Set oven to preheat to 400 degrees in the morning


Next morning:
Put the flour, baking soda and cheese in a bowl, and stir to mix.  Put the beaten egg in  the cup measure, then fill to the one cup line with milk. Pour into the bowl and mix just until flour is moistened.

Drop by spoonfuls onto a non-stick cookie sheet.

Bake at 400 degrees for 10 or 15 minutes.


NOTES:
Variation: Grease 12 muffin cups, use 1 cup flour, drop a spoonful into each cup,   and bake as muffins.  Also wonderful.
Experiment with other cheese types - pepper jack is also wonderful.
