There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Oatmeal bars

These are dense, very flavorful, and extremely filling - one of them will keep me satisfied for hours.  And it is a quick mix the night before, then just put them in the oven in the morning for a great breakfast.

Oatmeal bars
• 3 cups oatmeal (quick or rolled, but not steel cut)
• ½ cup wheat germ (optional)
• ¼ cup flour
• ¼ tsp salt
• ½ cup melted butter (1 stick)
• 2 eggs, beaten
• ½ cup milk or buttermilk
• 1 tsp vanilla paste or vanilla extract

Night before:
Mix the first 4 ingredients in a bowl. Mix in the butter until well distributed. Add the eggs, milk and vanilla and mix well.
Press into a buttered 8 X 11 or 9X 9 pan, cover and refrigerate

Next morning:
Preheat oven to 375° (set it the night before to come on before you wake up).  Take pan from the refrigerator and pop into the oven. Bake 25 minutes, then cut into 16 squares. Save any uneaten bars in the refrigerator for afternoon snacks.

NOTES:
• Add dried fruit or chopped nuts for variety
• Vanilla paste is found in some grocery stores and in cooking stores. It has a much more intense flavor than vanilla extract, and does not evaporate off with heat
