Quick to make, messy to eat if you cook the eggs soft, delicious and simple
Egg and Cheese English Muffins
- 4 whole grain English muffins
- 4 eggs
- 2 slices American cheese or thin slices of a favorite cheese
Night before:
No work at all
Next morning:
Toast muffins, fry eggs to desired consistency, top with cheese for the last minute of cooking. Serve eggs as a sandwich filling for the muffin.
NOTES:
- I don’t butter the muffin, typically, but that is an option.
