Amazingly, these can be made with
only two ingredients, AND are a good way to use overripe bananas. Great texture, no added sugar, very
good. I add nuts for a bit of crunch.

Healthy Banana Cookies- 2 medium ripe bananas, mashed. Very, very ripe is best.
- 1 cup of uncooked oats (quick or regular, but not steel cut)
- 1/4 cup finely chopped nuts
Night before:
Set oven to come on at 350°F in
the morning.
Spray a non-stick cookie sheet with cooking spray or
use a Silpat.
In the morning:
Combine the mashed bananas and oats in a bowl. Fold in the walnuts and place a tablespoon of each on the cookie sheet.
Bake 15 minutes. Serve warm.

Notes:Add any or all of the following:
- 1T sugar
- vanilla
- cinnamon
- egg
- mini-chocolate chips
